Dirk may be an industrial engineer by training, but cooking has been in his blood from the start.

Cooking runs in the family: in the 1970s and 80s his grandfather ran his own butcher shop and delicatessen, “De Lekkerbek” in Berchem. Dirk first took a different road — after five years as an industrial engineer he threw himself into the culinary world: first importing wines from around the globe, and training as a chef at PIVA Antwerp along the way.

After ten years in wine he founded d.ish and sharpened his style as a freelance chef for names such as Yves Mattagne and Roger Souvereyns. Today d.ish serves contemporary French-Belgian cuisine with Asian influences, from the cooking atelier in Emblem near Antwerp.

Corporate events and private celebrations for up to five hundred guests, with most of the work between fifty and two hundred. A tasting menu for ten at the table works just as well: the same kitchen, the same attention on every plate.

At d.ish everything starts with flavour — and flavour starts with honest, fresh produce from nearby. Sustainability is not a side note for us but a way of working you can taste on the plate.

Local organic growers, fresh seasonal produce

We work with seasonal, organic ingredients from local growers such as Groenlof and Volle Grond wherever we can. Fresh herbs and vegetables come straight from organic gardeners nearby, and we source our fish and meat only from suppliers who share the same commitment to quality and provenance.

Our own sourdough bread

During the pandemic we began working with sourdough, and we never stopped. The bread that reaches your guests' table is baked by us — with Label Rouge flour from Foricher, the T80, for maximum flavour. From starter to loaf takes us twenty-four hours. That time cannot be shortened, and you can taste it.

A 20,000-watt solar roof

A large part of our business runs on renewable energy we generate ourselves. Our solar roof has a capacity of 20,000 watts and supplies the atelier with clean power — from the cold store to the kitchen. This photo was taken while the roof was being installed.

Frequently asked questions

Where does d.ish cater?

d.ish works throughout Belgium and, on request, in the Netherlands and Luxembourg. Our atelier is in Emblem (Ranst), just outside Antwerp. For venues more than an hour away we charge a travel fee, always stated in the quote in advance.

For how many guests can I book d.ish?

From a dinner for ten to events for five hundred guests, with most of our work between fifty and two hundred. Tell us the number and the format and we will say straight away whether your date works.

Is there a minimum budget?

There is no hard minimum, but for a full fine dining menu with service the starting point is around € 65 per person, excluding drinks. You can indicate a budget range in the request form and we will build a realistic proposal around it.

I don't have a venue — can d.ish arrange one?

Yes. We work with thirteen partner venues across Flanders, from a vineyard to a former praline factory. You will find them on the Venues page. We put you in touch and coordinate everything.

What kind of cuisine does d.ish serve?

Contemporary French-Belgian cuisine with Asian influences. We work with seasonal, organic ingredients from local growers wherever possible. Vegetarian menus, allergies and dietary requirements are included in the proposal as standard.
